Hmmm.

  • AHAHAHAHAHAHAHAHAHA! I just got a motion-detecting DUCK for my birthday from [livejournal.com profile] poohmusings!!!!!! Right now I have it set up on the file cabinet to ambush my supervisor when she comes in. ETA: Scared supervisor. EXCELLENT.

  • I noticed on the Alton Brown turkey directions that it says to brine the turkey for 6 hours. (I also happened to see another brine recipe in a magazine the other day that called for 24 - 36 hours. THAT seems excessive and I'd think you'd wind up with a really salty turkey. Unless it was a really weak brine.)



    The timetable is this: Approximately 11 a.m. the turkey goes in the oven for a roughly 1 p.m. finish time.

    I *could* get up at 5 a.m. to shove the turkey in the brine, which would give it exactly 6 hours. Or I could put it in late the night before, which would have it in the brine for more like 12 hours. Or maybe a bit more. Would it be too long to have it in for 12 hours? I guess I really don't mind setting my alarm for early, and then just going back to bed.

It's a guard duck! I figure it can have 2 purposes: 1) guard you and 2) provide you with something to save the next time you have a dream in which you must rescue a duck. :D

Myself, I prep the night before. I'm not sure what you've decided on for a container, but I've always put it together the night before, plunked the turkey in a 5 gallon bucket with the brine, packed it tight with ice, and put the lid on securely.

Of course, I'm not the Thanksgiving person, but I do this for Christmas so YMMV on the bucket. I know I can put it outside overnight and it will remain reasonably cold. In fact, very rarely does the ice melt at all.

If you're using a cooler though it should be just fine.

12 hours is fine. That's what I do, with his recipe.

I basically make mine mid-afternoon Wednesday. It needs to cool back to room temperature, which takes about three to four hours.

So my turkey goes into the brine around 9-10 p.m.

I put the turkey in to cook the next day sometime around noonish.

You'll be fine.
