(no subject)

Alton, baby, I love you, but the way you told people to cook the turkey on the grill? Complete disaster. The heat shield made it so that the breast got done and the bottom half of the turkey was pretty much raw. We cut off the breast and are finishing the bottom in the oven.

In thinking about it, I'm not sure why this would be good advice in the first place - the breast always cooks fastest. Why in the world would you shield the other parts??

Oooooo. Normally he's damn good, but every once in a while he comes up with a... wait for it.... turkey.

Anyway, I stuck to the tried and true regular brine. That sucks yours turned out like that.

You don't cover it exactly, but put this heat shield thing around it. It's not on the recipe, but if you watch his video on the video tab, it explains it. If we'd have ignored the video, we would have been fine.
