Reason #6 I am a dork: RECIPES!
It almost being the biggest summer holiday weekend for people in the U.S., thought I'd share my favorite picnic recipe. Have you ever had Three Bean Salad? I hate Three Bean Salad. This is *good* bean salad. And it's pretty too!
1 16oz can kidney beans
1 16oz can pinto beans
1 16oz can garbanzo beans
1 cup shredded carrots
5 green onions, sliced
1 4oz can diced green chiles
2/3 cup vegetable oil
1/4 cup vinegar
1/2 tsp. minced garlic
3/4 tsp. salt
1 tsp. chili powder
1 tsp. oregano
1/4 tsp. cumin
1/4 cup sugar
A day ahead, drain the beans; rinse with cold water. Drain. Combine with the carrots, green onions, and chiles. In a separate bowl combine the rest of the ingredients, stirring until the sugar is dissolved. Pour over the vegetables. Mix well. Cover and refrigerate overnight.
Note: The original recipe called for 3/4 cup of oil which I found to be a bit too much.

I couldn't get pinto beans so I've used borlotti instead and I'm assuming that green onions are our spring/salad onions. Long thin green with small white bulbs, used in salads and stir fries etc?
Anyway, before I put it in the fridge I had a little taster... then another... and I had to cover it before I got through the whole bowl myself!
One last question - how long does it last (in the fridge)? I.e. will it last until Saturday night?

I'm not sure what borlotti is, but I'm sure any kind of bean would do. And yeah, that's what I call green onions.
Anyway, before I put it in the fridge I had a little taster... then another... and I had to cover it before I got through the whole bowl myself!
Hee!! It only tastes better after it sits for a while - so the flavors blend.
One last question - how long does it last (in the fridge)? I.e. will it last until Saturday night?
I would *think* it would last that long. There's nothing really perishable in it like milk or cheese or meat.

I brought some into lunch today and I'm glad I did as I don't have to leave the office to get any lunch.
My verdict - delicious. The sugar gives it such a nice almost-sweetness. But I put 3 crushed cloves of garlic in and I think it was a bit too much. I feel sorry for anyone talking to me today now...
Next time - less garlic :)

Yeah, it had been a while since I had made it myself and I put in 2 cloves this past weekend. That was *plenty.* I may even just do 1 in the future.
