Reason #6 I am a dork: RECIPES!

It almost being the biggest summer holiday weekend for people in the U.S., thought I'd share my favorite picnic recipe. Have you ever had Three Bean Salad? I hate Three Bean Salad. This is *good* bean salad. And it's pretty too!

1 16oz can kidney beans
1 16oz can pinto beans
1 16oz can garbanzo beans
1 cup shredded carrots
5 green onions, sliced
1 4oz can diced green chiles
2/3 cup vegetable oil
1/4 cup vinegar
1/2 tsp. minced garlic
3/4 tsp. salt
1 tsp. chili powder
1 tsp. oregano
1/4 tsp. cumin
1/4 cup sugar

A day ahead, drain the beans; rinse with cold water. Drain. Combine with the carrots, green onions, and chiles. In a separate bowl combine the rest of the ingredients, stirring until the sugar is dissolved. Pour over the vegetables. Mix well. Cover and refrigerate overnight.

Note: The original recipe called for 3/4 cup of oil which I found to be a bit too much.

What are garbanzo beans like? I'm not sure you can get them in the UK.

[identity profile] mrv3000.livejournal.com 2005-06-30 09:05 pm (UTC)(link)
They're also known as chickpeas. Does that name sound familiar?

If you don't have it, I'm sure you could substitute any other canned bean that you like.

Chickpeas, sure. Thank you! *is very excited by more recipes for bean salad*

Hope you like it! I've gotten compliments and requests for the recipe whenever I take it anywhere. :)

Can you post a picture of it? I don't think mine came out right. :(

[identity profile] audrich.livejournal.com 2005-06-30 10:24 pm (UTC)(link)
YAY!! I can have all of that on The Diet From Hell!!

{{steals}}

Is a 'cup' an actual cup, cup? Or a proper measure?

[identity profile] mrv3000.livejournal.com 2005-06-30 10:31 pm (UTC)(link)
Oh cool!! Hope you like it - I think it's YUMMY.

Yeah, it's a proper measure.

Sure!

[identity profile] ellory1.livejournal.com 2005-06-30 11:53 pm (UTC)(link)
Sounds good. I may try it for a party I'm going to on the 4th. :)

Hope you like it!! :)

Ooh sounds nice and spicy. And I reckon I've got most of that stuff already... I'll try and make it tonight!

[identity profile] mrv3000.livejournal.com 2005-07-01 03:33 pm (UTC)(link)
Cool! Hope you like it! I'm not sure about chili powder over there, but over here, it's very mild. It adds a lot of flavor but not a lot of heat, which I much prefer in food. This is *very* flavorful!

[identity profile] sleekuk.livejournal.com 2005-07-01 06:17 pm (UTC)(link)
Aah. I tend to go for th hot stuff over here. Paprika tends to be the milder powder. And I've realised I'm missing some ingredients so it's on my to make list for Monday :)

[identity profile] mrv3000.livejournal.com 2005-07-01 06:51 pm (UTC)(link)
We have paprika here too. Chili powder probably has a bit more kick than that, but it's nothing like crushed red peppers or cayanne pepper. Ouch!

[identity profile] sleekuk.livejournal.com 2005-07-01 07:06 pm (UTC)(link)
Mmm!

[identity profile] sleekuk.livejournal.com 2005-07-06 05:15 pm (UTC)(link)
I've made it! And there is TONS - I'm not sure I got the conversions quite right ;)

I couldn't get pinto beans so I've used borlotti instead and I'm assuming that green onions are our spring/salad onions. Long thin green with small white bulbs, used in salads and stir fries etc?

Anyway, before I put it in the fridge I had a little taster... then another... and I had to cover it before I got through the whole bowl myself!

One last question - how long does it last (in the fridge)? I.e. will it last until Saturday night?

HA!

I'm not sure what borlotti is, but I'm sure any kind of bean would do. And yeah, that's what I call green onions.

Hee!! It only tastes better after it sits for a while - so the flavors blend.

I would *think* it would last that long. There's nothing really perishable in it like milk or cheese or meat.

Cool! I'll give you the score out of ten when it's properly done :)

Hee hee!!

Hiya

I brought some into lunch today and I'm glad I did as I don't have to leave the office to get any lunch.

My verdict - delicious. The sugar gives it such a nice almost-sweetness. But I put 3 crushed cloves of garlic in and I think it was a bit too much. I feel sorry for anyone talking to me today now...

Next time - less garlic :)

[identity profile] mrv3000.livejournal.com 2005-07-08 03:36 pm (UTC)(link)
Oooo! Glad you liked it!

Yeah, it had been a while since I had made it myself and I put in 2 cloves this past weekend. That was *plenty.* I may even just do 1 in the future.

[identity profile] sleekuk.livejournal.com 2005-07-08 03:43 pm (UTC)(link)
I've just given the last bowl's-worth to my parents. I've eaten the rest myself over the past two days which might have been bean-overkill!

Yummy scrummy though - it'll be my party dish from now on (although my version is more garlic bean salad than chilli bean salad!).

Thanks :D

[identity profile] mrv3000.livejournal.com 2005-07-08 03:48 pm (UTC)(link)
HEE!! I know, isn't it addicting? People are always so surprised that it's yummy because it's just *bean salad* after all! :D

[identity profile] sleekuk.livejournal.com 2005-07-08 03:50 pm (UTC)(link)
Yes although I've been having strange after-effects after eating that much of it. You don't want to know ;D

[identity profile] mrv3000.livejournal.com 2005-07-08 03:54 pm (UTC)(link)
No, I probably don't. :D

[identity profile] sleekuk.livejournal.com 2005-07-08 03:56 pm (UTC)(link)
Haha!
