Does anyone have a good pumpkin bread recipe?

ETA: I was checking out the menus for different restaurants at Disneyland/DCA just now. When you go as often as I do, you tend to get really sick of burgers and fries really quick. Oh, sometimes I'm in the mood, but more often than not I'm looking for something else.

Anyway, I was looking at the Corn Dog Castle's menu which is a fairly lame thing to do since 1) their menu is basically...corn dogs, and 2) it's looking at Disneyland menus, for cripes' sake. But I noticed you can now get apples instead of chips with your corn dog! Hooray! And then I noticed that other places will now let you swap coleslaw for fries with your sandwich, which isn't as yay as the apples, but still is better.

Don't get me wrong, I do like fries, but after a long day at an amusement park, sometimes the last thing I want to see is fried food, much less eat. Blech. (And this is why
