Definitely mid-week. There'll still be crowds, but there should be less people mid-week because, hopefully, you'll only be contending with other vacationing families rather than vacationing families AND locals who are killing their Saturday (or Sunday) at the park. And I recommend getting to the park early-ish in the morning to get in some rides before it gets too crowded and too hot. Then retreat to your hotel (or somewhere cool) in the afternoon, and return to the park around 4 or 5 when, again, it'll be a bit cooler and a tad less crowded. And your kids HAVE to watch the Electric Parade at night. It's held at the California Adventure park now, but it's still my favoritest Disneyland night-time parade. :)
