Jan. 9th, 2009 11:11 amIt's not really a New Year's resolution, just more...trying to ween myself off frozen dinners. Even the "healthy" ones are filled with preservatives or have more sugar or salt than the average human should eat in a week. It might be low calorie, but it's not all that good for you. Plus...a lot really aren't even very good tasting. But I'm addicted to them because the last thing I really want to do when I get home at 6:30 is cook. (And that househusband has yet to materialize.)
I bought a big package of chicken breasts last night and I'm planning on buying a package of individual salmon pieces that Costco has. I'll keep myself stocked up on frozen vegetables that I can quickly throw in a bowl and microwave.
SO.
Does anyone have any good *easy* recipes for stove-top chicken breasts or stove-top salmon? (If it takes 20 minutes to prep before it even starts cooking, I'll probably be wishing for those frozen dinners again.) I'll take oven recipes too, but I'll only be able to use those for about another month before it gets too warm to use the oven.
